Apple Filling
  1. 1/3 cup granulated sugar
  2. 1/3 cup brown sugar
  3. 2 1/2 tsp corn starch
  4. 2 tsp cinnamon
  5. 1/8 tsp all spice
  6. 2 medium apples diced (Honey Crisp or Granny Smith Apples)
  7. 1 tsp lemon juice
Pastry Dough
  1. 1 cup all purpose flour
  2. 1/2 tsp salt
  3. 1/2 cup cold butter (cut butter in half)
  4. 1/4 cup ice water
Egg wash
  1. 1 egg
  2. 2 tsp water
Glaze (Optional)
  1. 1/4 cup confectioners sugar
  2. 1 tsp water
  3. 1/8 tsp nutmeg
Apple Filling
  1. Heat saucepan to medium temperature and combine the sugar, corn starch and spices.
  2. Once sugar is melted, add diced apples, lemon juice and mix thoroughly.
  3. Bring mixture to a boil while stirring constantly.
  4. Reduce heat to low temperature and let simmer for 7 minutes or until apples are tender.
  5. Remove from heat and set aside to cool.
Pastry Dough
  1. In a bowl combine the flour and salt.
  2. Add 1/4 cup of butter (half of the divided portion) and crumble into the flour.
  3. Gradually add water while tossing with hands/fork until a ball is formed.
  4. Roll dough out to a rectangle (12x6 or any rectangular size you can achieve).
  5. Cut the remaining 1/4 cup of butter (last divided portion) into very thin pieces.
  6. Arrange half of the butter slices over 2/3's of rolled out rectangle shaped dough.
  7. Fold the 1/3 portion of unbuttered dough over the middle 1/3 and fold over again over the last 1/3 of buttered dough. You should be left with a 6x4 rectangle but any size rectangle will do.
  8. Using you rolling pin, roll this dough out again to a rectangle and repeat the rolling of butter into the dough one more time.
  9. Wrap dough in plastic wrap and refrigerate for 15 minutes.
  10. Remove from the fridge and roll the dough out to a rectangle (12x6)
  11. Fold dough in half two times and refrigerate for 1 hour (This step attributes to the flakiness of the dough).
Egg wash
  1. Whisk egg with water.
Glaze (Optional)
  1. Combine all ingredients in a saucepan over medium heat and cook for 5 minutes or until mixture thickens.
  2. Remove from heat.
Putting it all together
  1. Remove dough from the fridge and roll out into a large square, preferably a 12'' square. If you prefer a thicker dough you can adjust the size you roll the dough to a smaller square and vice versa.
  2. Cut dough into 4 squares (you may adjust the size of these square depending on your preferred size of the initially rolled out dough).
  3. Brush interior of dough with the egg wash.
  4. Spoon in 1/4 cup of filling on half of each square then fold remaining half of dough over the filling forming a triangle.
  5. Ensure sides are closed tightly by pressing edges with a fork.
  6. Place the filled and sealed pastries on an oiled baking sheet.
  7. Brush the top with the remaining egg wash and sprinkle sugar on top(optional).
  8. Bake in the oven at 450F for 20-25 minutes or until golden brown.
