Pita Bread
  1. 2 1/4 tsp yeast (dry active)
  2. 1 1/2 cup warm water
  3. 1 tsp sugar
  4. 3 cups all purpose flour
  5. 2 tsp salt
  6. 1 1/2 tbsp olive oil
  7. 1 1/2 tbsp vegetable oil
Pita Crisps
  1. 4 cups of vegetable oil for frying.
Seasoning Mix
  1. 1 tbsp basil
  2. 2 tbsp garlic powder
  3. 2 tbsp onion powder
  4. 1 tbsp oregano
  5. 2 tsp black pepper
  6. 2 tsp salt
Pita Bread
  1. In a small bowl, add 1/2 cup of warm water
  2. Add and dissolve the sugar
  3. Add the yeast and let the mixture sit for 10-15 minutes. Enough time to allow the yeast to ferment properly.
  4. While the yeast is fermenting, in a separate larger bowl, combine the flour and salt.
  5. Make a well in the center of the flour mixture and once the yeast has been properly fermented pour that into the center slowly while mixing in the flour. Proper fermentation of yeast is achieved once the mixture has doubled in size.
  6. After you have mixed the yeast mixture into the flour you will need to add more water.
  7. Add the remaining 1 cup of warm water and mix throughly into the dough mixture until you have achieved a soft, smooth yet sticky consistency.
  8. Using both oils, oil the inside of a separate bowl and place the dough inside.
  9. Cover tightly with plastic wrap and a towel and place in a warm place to allow the dough to rise.
  10. After 30 minutes, remove the dough from the bowl and knead on a lightly floured surface (about 1/2 cup of flour) so the dough is no longer sticky.
  11. Cut the dough into 12 smaller dough balls and place onto a floured work space or pan and let rise for 10 minutes.
  12. Open each dough ball using your hands and then roll them out using a rolling pin.
  13. Roll the dough out to a thin circle. Roll out to your desired thickness. For pita crisps, it is best to roll out very thin.
  14. Heat the oven to 500F and once you have the dough balls rolled out, place them into a sheet tray and oven bake them for about 3 minutes on each side ( must flip the pita) for a total time of 6 minutes. You will notice the pita puff up like a pillow in the oven. This is how you make Pita Bread.
Pita Crisps
  1. Now to make the pita crisps, take each pita bread and cut into quarters (or smaller depending on your preference) and fry in vegetable oil until you have achieved a crispy texture and golden color.
  2. Place on a padded surface and pour on the seasoning mixture while tossing the pita crisps to ensure you have coated each piece and side completely.
  3. Now you can transfer these Pita Crisps to a serving dish serve with your favorite dip or you can serve these alone.
  4. My recommendation is to serve this with a garli yogurt sauce or hummus. Recipes for both of these dips are coming soon!
Seasoning Mix
  1. Combine all the ingredients and set aside for when the pita crisps are ready to be seasoned.
