Dough Ingredients
  1. 3 cups Flour (for whole wheat sub 2 cups with whole wheat flour)
  2. 1 TBS chopped Basil (sub dried)
  3. 1 TBS chopped Oregano (sub dried)
  4. 1 cup warm water
  5. 1/2 tsp salt
Pumpkin Filling Ingredients
  1. 3 small pumpkins (munchkins) or any pumpkin of your choice
  2. 2 whole sweet onions
  3. Spice Mix: 2 tsp cinnamon, 2 tsp all spice, 2 tsp rosemary, 2 tsp nutmeg, 2 tsp coriander, 1 tsp thyme.
  4. 1 TBS brown sugar (optional)
  5. 3 tsp fresh ground ginger
  6. 1 TBS apple cider vinegar
Dumpling Glaze (Optional) Ingredients
  1. 1 TBS chopped cilantro
  2. 1 Roma tomato pureed
  3. salt to taste
  4. 2 tsp coriander
  5. 2 tsp flour
  6. 1/2 cup of water
Dough Instructions
  1. Put flour in bowl and make a well in the center.
  2. Pour in herbs and salt into the center.
  3. While mixing the flour with your hand or a spoon, gradually pour in the warm water. Water must be warm to ensure soft texture of dough.
  4. Dough should not be too sticky. If it is too sticky just add a little more dough. Once you have mixed the flour and water together, remove dough ball from the bowl and knead the dough on a lightly floured surface. Knead until soft and smooth then wrap in plastic wrap and place back in the mixing bowl. Cover and set aside for when filling is made.
Filling Instructions
  1. Peel and dice the pumpkins & sweet onions.
  2. On high heat, heat 1 TBS olive oil in a sauce pan and caramelize the onions.
  3. Once caramelized, add ginger and cook while stirring for 3 minutes. Add the apple cider vinegar and cook for 5 minutes.
  4. Add the diced pumpkins, salt & spices then cook over medium heat for 15 minutes while having the lid half on. You may add the brown sugar at this point should you prefer a more sweet flavor.
  5. Add 1 cup of water and cover pan and let simmer on medium-low heat for 20 minutes or until pumpkins are tender.
Dumpling Glaze (optional) Instructions
  1. In a small skillet, heat 3 tsp olive oil. and being to cook the pureed tomato.
  2. Add in spices, salt and water. Cover lid and let simmer on medium to low heat for 15 minutes.
  3. Whisk in flour then lower temperature to very low heat for 5 minutes. Turn off and set aside for when dumplings are ready. Glaze is optional and not necessary; dumplings filling should provide enough flavor and juice.
Putting it all together
  1. Unwrap the dough and roll into a thick cylindrical shape then slice into 15 pieces. Using your hand, round each dough piece and place into a floured bowl. Flatten the ends of each dough ball so the center is puffed then place onto a floured surface. Using a rolling pin, roll out the flatten dough balls to your desired size (or just over the size of your palm).
  2. Place the flatten dough onto the palm of your hand and spoon in 1 TBS of filling into the center. Tap some water on one side of the dough and gently yet quickly connect to the other side of dough forming a pocket. You may choose any other “dough closing” method. You can also bring together the entire circumference of the dough while twisting off at the top to close dough and discard extra pieces. This will create a twisted top look. Or you may use any dough maker of your choice (empanada/pie press, dough maker, ravioli cutter, etc.).
  3. Place all dumplings into a bamboo steamer (or any steamer, just remember to base the steamer with vegetable shortening) and steam cook for about 24 minutes.
  4. Once cooked, place on a platter and pour over glaze (optional). Glaze is not mandatory as dumplings should already be moist and flavorful without the glaze.
